Gramona Vi de Glass was born in 1997. Currently and after years of research, this wine is made with a new prototype and the support of two refrigerated chambers. We chill the grapes from + 25º C to + 5º C, in order to prepare it for later freezing, at -6º C or -8º C, depending on the concentration of sugars and with the help of liquid nitrogen. This cooling process improves the freezing of the grapes, thus achieving more speed and homogeneity in the process. The must remains fermented in 300 liter boots for 2 months. This fermentation takes more time than usual due to the high concentration of sugars. The result obtained are very concentrated fruity wines, sweet and refreshing at the same time. Based on the meticulous observation and treatment of the factors that influence our land and its habitat. We do not apply chemical herbicides or pesticides, we use natural resources with the main objective of preserving the balance of the environment and maintain spontaneous plant coverings to obtain spongy soils. Through biodynamics, a step beyond the ecology, we vivify our vinas and seek to raise the levels of biodiversity: we apply infusions and decoctions of plants to avoid pests, and we elaborate our own animal and vegetable compost and our own prepared from our farm of cattle, sheep and horses.
