Bright color, dark ruby.
In nose, it is fresh and expressive, fruity, with some sweet notes, wet but especially dry earth, a wealth of nuances in a spectacular balance and very appetizing. When opened, the wild, low forest, juniper and cedar wood sensations are enlivened, with spicy notes of pepper, orange and an aroma of black plums combined with blueberries.
Its passage through the mouth is expressed in a powerful, well-structured way, reflecting the black fruit intermingled with the clove. Tasty tannins of good quality, with a long finish and elegant profile that is recognized as a high-end wine.
Elaboration and ageing
It has been elaborated exclusively with the best Tempranillo grapes from the harvest of the Finca Granja de Legardeta, harvested and selected twice by hand, in hours of little sunlight to avoid pre-fermentation before arriving at the winery. Before pouring the Tempranillo grapes into the hopper, it passes through a selection belt. The must is de-stemmed and lightly crushed to allow it to macerate at 12ºC before starting the fermentation in stainless steel tanks with cold jackets, to control the temperature between 23-25ºC. It ferments for approximately 10 days, at the end of which it is devatted and undergoes malolactic fermentation in barrels. It remains for 14 months in new French Allier oak barrels, 60% new and 40% second wine.
