Tasting note:
Color: Yellowish pale with greenish tones.
Nose: Aroma of yeast with characteristics of the variety.
Palate: Wide, balanced, with well-integrated acidity and fruit notes characteristic of the variety.
Elaboration:
This wine has been made with grapes of the Pedro Ximenez variety from old vines
cultivated in vases of the places of Rio Frio Alto, Cero Macho and Sierra de Montilla. The grapes were taken whole to open cubes where they were trodden and fermented. Later the vinification was finished in jars where the wine rested under a flower veil for eight months.
