Notes of Tasting:
- Color: Intense ruby red.
- Nose: Aroma of sweet spices, with balsamic notes and a discreet toasted background.
- Palate: Round, fresh, balanced and enveloping. A wine with a marked personality.
Elaboration and Ageing:The Garnacha, Syrah and Tintilla de Rota grapes are harvested manually from the vineyards of the Sierra de Cádiz and the Serranía de Ronda. In the glass it has a dark cherry colour, lively and brilliant. It is a mixture of garnacha (40%) and syrah (30%), to which is added tintilla de rota (25%), aged for 12 months in French Allier oak barrels. Later rest during 12 months more in bottle.
Curiosities:The Papoya Negra that gives this wine its name and illustrates its label is a native Andalusian goat whose milk is used to make Payoya goat cheese in the Sierra de Cádiz and Serranía de Ronda.
