Processing and aging:
Destemming and previous maceration. Fermentation with its own yeasts, soft remounts. Malolactica in deposit, the aging ten months in French oak barrels of different uses and sizes depending on each plot. Assembly in tank until bottling without clarifying, filtering or sulfiting in November 2011.
