Tasting Note:
Colour: Very stable cherry colour.
Nose: A wine with an elegant expression, with aromas of ripe black fruit, flowers and scrubland, without forgetting the toasted notes from its ageing.
Palate: Fresh and pleasant, very fruity, with pleasant tannins and good acidity.
Elaboration and ageing:
Destemming and pre-maceration. Fermentation with its own yeast, gentle pumping over. Malolactic fermentation in tank, ageing for ten months in French oak barrels of different uses and sizes depending on the plot. Assemblage in tank until bottling without clarification, filtering or sulphiting in November 2011.
