The name of this wine comes from place of the Molar , currently made up of 17 hectares spread over three vineyards planted in different soils and orientations. He assembly of these three vineyards provides complexity , freshness and typicality this jumillana garnacha .
CATA's notes:
Development and Aging
A monovarietal of grenache , perhaps the only one of the entire Jumilla denomination of origin, and which carries with it all the genetics of the firm of Jose Maria Vincent . A wine from a single plot, such as those that have been successfully dedicated to the Monastrell, Syrah and Cabernet grapes, and which undergoes alcoholic fermentation in underground wine presses .
The The main novelty of El Molar is its aging , which after malolactic fermentation in barrels to reduce excess acidity, is done in foudres , large wooden deposits, where a long aging takes place and which, thanks to the lesser contact with the wood, favors a slower and longer oxygenation. The use of frudre is very common with reductive varieties, in the case of wines from Rhône, in the southeast of France, or Nebiolo from Italian Piedmont.
With these references in breeding, it is not surprising that El Molar already has its own name.
Breeding
12 months in large barrels (Fudres)
Its maturation of a year in the old foudres allows to preserve the aromas of scrubland and aromatic herbs from the shady area of the El Molar estate. Its sweet character and freshness stand out .
