Elaboration and Ageing:
- Color: Lemon yellow with emerald green sparkles, clean, bright and very glyceric tear.
- Nose: Clean and frank aromatic set, high intensity where notes of apricot, peach, fennel, green almond peel, anise and fresh fruit (lychee, grapefruit, green apple). Memories of freshly cut hay and light touches of smoke mixed with mineral notes.
- Palate: Velvety and silky mouthfeel with development towards great volume and structure. Balanced acidity gives it freshness and nerve. Long and tasty, fruity aftertaste, with a retronasal sensation even more intense than in its olfactory phase highlighting the memories of fennel and anise.
Fermentation in stainless steel tanks with temperature control. Fermentation / maceration 32 days.
