Tasting Note:
Color : Ruby with piping Garnet and dense tears that stain the cup.
Nose : clear predominance of mature fruit both black and red, when aired, hints of black licorice , pepper and some coffee.
Mouth : With good body, medium intensity, good balance between fruit (very present) and acidity, long finish with smoky and mineral hints.
Elaboration:
Manual harvest with selection in the vineyard, only the best clusters go to this wine, the harvest is carried out at night to preserve the fruit from the high temperatures of the area, later 48 hours of cold maceration to then proceed to do the malolactic in new French oak barrels where it will remain for 12 months plus another 12 minimum rest in the bottle before going on the market.
