It noted for its intense varietal perfume, where floral scents (orange blossom and jasmine) and other fruit with hints of citrus and tropical notes dominate. This wine shows the high quality of albariño grapes grown in a single vineyard, under the concept of wine manor or estate, and where the ecosystem is clearly expressed in the wine.
Made exclusively with grapes from the vineyard Pazo Baión strains over 40 years conducted in trellis and single cord. After a thorough ripening control for determining the optimum date for manual harvest in boxes of 20 kg capacity, avoiding the alteration of the quality of the grapes are selected in vineyard and cellar the best grapes for this type of wine. The wine is obtained by soft pressing of destemmed grains and cold settling for 36 hours, fermentation takes place over 18 days, after which a partial malolactic fermentation (15%) is made and ends with an aging of 4 months in tank stainless steel on its lees until bottling.
