- Color : lemon yellow with greenish tones, dense and glyceric.
- In nose It presents a wide range of aromas of long intensity where salinity stands out, white and yellow stone fruit, marine touches, hints of white flowers and citrus that provide freshness.
- In Mouth It is very elegant, with sensations of fruit in syrup and balsamic from the aging on the lees with hints of aniseed, fennel, with excellent acidity, fatty, fresh, very tasty, persistent, long aftertaste with mineral tones and some excellent bitter touch. Very sweet.
Development and agingEnvidía Cochina -Tête de Cuvée , is produced in terroirs with exceptional conditions, with a unique viticulture and production process. The vines have an average age of more than 30 years, taking more than eight years of transition to biodynamics.
The vineyards are distributed in privileged areas within the varied orography of the Val do Salnés. The harvest took place during the second week of October, discarding at the end of July the excess bunches in each vine, leaving a small quantity that arrives in optimal concentration conditions at the harvest. After the selection of the clusters in the winery and subsequent maceration (8-10 hours), it is fermented with indigenous yeasts from the pie de cuba made days before at a low temperature and for a very long time in time. After its fermentation, we select the upper part of the vats of that vintage with the highest fruit load.
(Tête de Cuvée) . has a c
aging on its own fine lees, performing weekly batonage, for 6 months and it is blended with 15% of the previous vintage destined for Frore de Carme (which was aged on its fine lees with monthly batonage, for 1 year, plus 3 months with lees from the following vintage, plus another 3 months maturing on stainless steel tank).
Curiosities:
The label of this wine imitates a press clipping of an article about the popular Spanish expression "envy filthy", with a cartoon that changes every year. The label also has thermochromic ink, so it indicates the optimum point for wine consumption.
DID YOU KNOW...? Eladio Pineiro was the one who
founded in 1983 the Bodegas Mar de Frades . Because he never had the desire to own a large winery, although he did have the desire to make a personal wine, and because his partner suffered a serious illness, he decided to get rid of those wineries and temporarily separate himself from the wine world until, once these circumstances, he fully returns to the sector with family Adega Eladio Piñeiro.
