In the aftertaste the notes of roasted, vanilla and light balsamic touches are appreciated strongly, excelling the sensations of red fruits. Long and persistent finish.
Elaboration and Aging:
Sierra Cantabria Seleccion is a monovarietal of Tempranillo . The grapes come from their own vineyards planted at 560 meters altitude in San Vicente de la Sonsierra and Laguardia. The preparation of Sierra Cantabria Seleccion begins with a manual harvest and a double selection, one in the vineyard and another in the winery. Once in the cellar the must ferments for 2 days with selected yeasts at 27ºC. Subsequently a maceration is carried out that lasts 17 days. To finish the fermentation process Sierra Cantabria Seleccion ages during 6 months in deposit and during 6 months more in American and French oak barrels .
The viticola project of Vinedos and Bodegas Sierra Cantabria in Rioja and Toro is aimed at the search for wines that evoke the vineyard, of great versatility and marked identity. Marcos and Miguel Eguren, along with their father Guillermo and the new generation, represented by Eduardo Eguren, have worked in the excellence in the care of the vineyard and the maximum respect to the fruit in the winery to obtain wines that are ascribed to the new ones Classic: wines that last in time, that combine fruit, power and structure with elegance, freshness and subtlety.
