CATA's notes:
- Color : intense pillory of high layer.
- Nose: aromas of black fruit and compote fruit, spaced, dairy and long retronasal.
- Mouth: It is elegant and very balanced. Long and intense finish, persisting on the palate.
Elaboration and aging:
Red wine made with bunches of Tempranillo grapes. Only old vinas are used for this wine, with a reduced production. Selection by hand, grain by grain, selection tables by vibration and weight. Squeezed destemmed grape. Long and controlled macerations applying temperature regulation in wooden vats. Natural overrun by gravity and pigeage for the best extraction of polyphenolic compounds. The pressing is done with pneumatic presses, subsequently performing the malolactic fermentation in new French oak barrels.
The hard aging phase
18 months in new French oak barrels and the rest in bottle. Curiosities:
