Elaboration and Aging
Own vineyards located in the Finca Ygay . The vineyards of Ygay occupy an area of 300 hectares surrounding the winery, in the Rioja Alta, with a difference in altitude from 320 meters to 485 meters. Made with varieties 93% Tempranillo, 4% Mazuelo, 2% Graciano, 1% Garnacha . Harvest is done manually, the clusters are despalillan and squeeze gently. The varieties ferment separately in stainless steel tanks, with temperature control. The encubado has a duration of 8 days during which are made up and bazuqueos, to favor the contact of the must with the skins and cause a slow and natural extraction of aromas and polyphenols. After the fermentation the solid parts of the grape are pressed in vertical presses, by means of a slow and gentle process that favors the extraction of the color and mature tannins that Reside in the skin.
Fostering Process : Created for 2 years in American oak barrels of 225 liters capacity, of which 8 months it passes them in new barrels and finalizes its aging with a rounding of 24 months in bottle.
