Its color and structure is obtained by macerating after alcoholic fermentation. Malolactic fermentation gives the wine the proper maturity for aging in American and French oak. Before being bottled, it clarified traditional way with egg whites. Finally it happens to our openwork where it will age under conditions of temperature and humidity suitable so far out to market. Reserve 24 months in barrel and 36 months in bottle before its release.Curiosities:Visit the historic cemetery cellar can become an extrasensory experience. Called Catacombs, this is a bleak and inhospitable space that gives way to a series of dark tunnels full of mold, in which thousands of bottles lie with unsuspected ages. So mysterious is this particular cemetery that older bottles are protected by a fence of iron mold completely covered. The key that opened it was thrown into the river in a symbolic act more than 30 years ago and has never reopened. In 2008 a renovation of the oldest part of the cellar is in charge, giving way to a new dynamic and functional space activities around wine. Stone, wood and iron, in respectful union, frame the nerve center of the cellar space revaluing a centenarian in 2010 won the Best of Wine Tourism Award, International Great Wines Capitals contest that rewards excellence.
