CATA's notes:
- Intense red.
- Aromas of ripe red berries from the forest, subtle roasted, spicy and mineral touches.
- Its fine and delicate tannins blend in perfect harmony on the palate together with the sensations of small berries in a combination of color and elegance that generates a depth of resounding simplicity.
Production and Aging: Fruit of the San Lázaro plot. It carries in its interior the character of the Tempranillo grape, the variety with which it is made in its entirety. Manual harvest in boxes of 15 kg. Cold maceration for 24-48 hours. Fermentation for 10-12 days with two daily pressings and a small pump-over in open tanks. Malolactic in barrel.
"ESTIMATED" aging for 12-14 months in new French oak barrels (according to vintage).
I usually: Calcareous clay soil with sandy clay texture. Deep. It is a poor soil whose peculiarity is the superimposition of horizons formed in the Quaternary era of fine sand on a limestone soil from the Tertiary era. For this reason, we enjoy very well oxygenated land with great biological richness and great viticultural potential. Its location sheltered from the southeast winds favors the natural protection of the vineyard, generating a unique micro-climate on this plot.
