Elaboration and Aging
The reserves of Marques de Riscal are basically made from grapes from vines over 15 years of the Tempranillo variety, located in the best limestone soils of the Rioja Alavesa. This variety supports well the aging in wood and the aging in bottle thanks to its good acid balance and its fine tanicidad. The varieties Graciano and Mazuelo, whose percentage in the mixture does not surpass 10%, bring freshness and vividness of color. The fermentation takes place at a controlled temperature of 26ºC with a maceration time that does not exceed 12 days. The reserves of Riscal remain approximately two years in American oak barrels, configuring a wine that fits within the canons of La Riojan classicism, fresh, fine, elegant and with great potential for aging. Before going on the market has a minimum period of tuning in a bottle of one year. Aging: 26 months aging in American oak barrels.
