Tasting Note:
- Color: Onion skin, velvety, with touches of evolution towards tile.
- Nose: Fresh and very persistent. Little presence of fruit (a bit of ripe fruit and liquor), with notes of good wood and light touches herbaceous, floral and aniseed
- Mouth : Fresh and smooth, with body and complexity given its barrel aging conditions. Elegant and balanced, it has a long and persistent finish with a slight final bitterness
Elaboration and aging:
Made with selected grapes from four own farms. Aging of 4 years in French oak barrels with two racking per year. Clarification with clear of fresh eggs. It rests in the bottle for a few years.
This wine only makes the years in which the state of the grape is very good to be able to do all this long process
