Vis a Vis is a product developed at 100% with grapes Verdejo; a Selected grape Based on a specific maturation in the field to achieve balanced levels of reducing sugars (alcoholic degree) and acidity.
All the fermentation process is carried out in autoclave deposits (isobaric deposit that does not allow the loss of CO2 during the fermentation) with selected yeasts.
The fermentation is paralyzed when it reaches the 5.5 degrees alcoholic and during the slowdown of the same, the final degree reaches the 6 degrees of alcohol. A key point and difficult to perform by natural means, as is done in the VIS to VIS .
