Certified organic natural viticulture treated in a special way looking for a lower yield to obtain a higher maturity. Vintage Manual. The alcoholic fermentation is carried out in a stainless steel tank with wild yeasts (spontaneous, characteristic of the grape), paralyzation of said fermentation by lowering temperature with a must that maintains a residual sugar level between 60-80 grams of liter. Temperature controlled 18-22ºC. Clarification with bentonite, natural stabilization against cold, filtration.
Curiosities: The fermentation is carried out with natural yeasts, but it is stopped by a drop in the temperature of the deposit when the wine has a balanced ratio between the alcoholic degree and the residual sugar that is sweet, but fresh and with acidity.
