Elaboration and Aging
The QS2 Sardonia has a aging of 14 months in French oak barrels, 45% new and 55% of a use. Clarification is performed with egg white and a light filtration before bottling.
Harvesting is one of the key points of the process. The same payment can be harvested up to three different times to ensure that the grapes arrive at the winery at its optimum. Once the fruit has been collected in small boxes, a double selection is made, first of bunches and then grains and by means of a crane bridge grapes are introduced by gravity in the deposits, where they autofermentan with their own native yeasts, with Remarkable results at the aromatic level.
The malolactic is made in French oak barrels, not necessarily new, and the aging is made in barrels of the same forest (they are doing some experiment with concrete tinos), both new and one year (depends on the year), and The final assembling of the wine is done in spring, without each row having the same proportion of each variety.
Aging: 14 months in barrel and the rest in bottle.
