Elaboration and aging:
Elaborated with Tinta de Toro from strains of more than 100 years planted in glass and poor yield. The must ferments with wild yeasts in small stainless steel tanks and bazuqueos are made without looking for much extraction. After the alcohol, the malolactic fermentation develops spontaneously. The wine is not filtered, but decanted naturally and does not add sulfur.
Menade has been the pioneer winery and the only one of the D.O Rueda to be certified as Ecological . We could say that they have marked a trend in the area.
Why Clandestino? Simply because it is about elaborations that could be marketed some years or not, depending on the designs of climatology and the decisions made in the winery.
The Clandestino line evidently continues with the same philosophy in the field and in elaboration as the rest of the wines of the winery: Wines without makeup, with personality and authenticity.
They have been making wine from about 35 years Vineyards planted in Chickens , owned by the family, and almost from the beginning they could see that verdejo presented different characteristics to the rest of the strains, the Verdeja It was eight years ago when they acquired the vineyard family and decided to start grafting the entire vineyard of their farms with Verdeja, after a mass selection. The Verdeja has distinctive morphological features, the grapes are smaller, the clusters more oval and is more resistant to diseases such as botrytis, for presenting a thick skin. The aromas are the expression of the authentic Verdejo, they present a greater rusticity, but also greater authenticity. The analytical parameters reveal higher acidities and more concentrated grapes.
