Production and aging:
Made with 100% Mencia grapes that come from cooler, clayey soils, with vines grown on steep slopes facing east and north. small plots of century-old vineyards distributed on the slopes of the mountainous belt that makes up the wine-growing Bierzo.
The grapes are collected in small boxes of 12 kilograms. Bunches chosen one by one on a selection table. It is destemmed and without squeezing it is taken to stainless steel tanks where it ferments for 15 days at 25 degrees.
