Production and aging:

Made with 100% Mencia grapes that come from cooler, clayey soils, with vines grown on steep slopes facing east and north. small plots of century-old vineyards distributed on the slopes of the mountainous belt that makes up the wine-growing Bierzo.

The grapes are collected in small boxes of 12 kilograms. Bunches chosen one by one on a selection table. It is destemmed and without squeezing it is taken to stainless steel tanks where it ferments for 15 days at 25 degrees. During this time they are punched and slightly pumped over to make a selective extraction. Aging is 3 months in barrels.
