Roger Goulart Semi Seco Reserva is a pleasant and very fine cava with authentic aromas of great finesse and finish. This cava tries to preserve the freshness and youth of the base wines with which it is made, with a light ageing note provided by the yeast during the time it is aged in the cellar. It is a young sparkling wine, despite its 18-month ageing. It is an essential reference for lovers of semi-dry cava.
TASTING NOTES:
Sight: Pale yellow colour with fine persistent bubbles.
Nose: Fruity aromas in which notes of white fruit and citrus stand out, together with others of pastry and slightly aniseed.
Mouth: In the mouth it is sweet, but with a pleasant acidity that makes it very fresh, intense and persistent.
DENOMINATION OF ORIGIN: Cava.
WINEMAKING: Made with the Xarel-lo, Macabeo and Parellada varieties.
AGEING: Aged for 18 months in barrels.
CURIOSITIES: Roger Goulart is a pioneer in the traditional method of sparkling wine production in Spain. The varieties are made separately. The grapes are refrigerated prior to pressing (to avoid loss of aromas). Must pressing yields of 50%. Static racking at low temperature. Must fermentation at 16-18ºC with selected yeast. Base wines with an important acid component and a fairly low pH for long ageing. After tirage, the second fermentation and ageing is carried out in cellars located at a depth of 30 metres, at a constant temperature of 14ºC all year round.
