Roger Goulart Brut Nature Reserve is u n dig cleansed and nice . with a taste fruity in its beginnings and to the taste of the great palates. After more than 30 months in contact with the yeasts Caves Roger Goulart obtains a cava unique , concentrated in nuances and notes of aging that perfectly complement the fruity tones of the base wine.

Caves Roger Goulart is a winery specializing in the elaboration of long aging cavas , which dates back to 1882. This year Magí Canals i Farré excavated the Cava Sant Jordi in the garden of his house, where he would later begin to make cava using the traditional Champenoise method.

Cuevas Roger Goulart makes its cavas with delicacy and demand. A strict selection of the best grapes from the best production areas, with the optimum levels of acidity to obtain very fresh base wines. These wines, preserved in the best conditions, will be essential for the second fermentation and subsequent aging.

Each variety is made separately. Before pressing, the grapes undergo skin maceration at a low temperature. The pressing is smooth, obtaining only a 50% yield. After deboning, the must ferments at a controlled temperature, 16-18°C, with selected yeasts. Once the fermentation is finished, the coupages are made to carry out the tirage. After the second fermentation and a minimum aging of 9 months, when the disgorgement is carried out, the expedition liquor is added, leaving the sugar level at approximately 8 gr / liter.
