Tasting Notes:
- Color red mulberry.
- In nose it is fine and deep. They emphasize the red and black fruits with touches of spice, minerals and balsamicos, besides notes of torrefacto and chocolate. With the wood very well integrated.
- In mouth is fine and well balanced in terms of maturity and freshness. It has a very powerful and long finish. Very elegant.
Elaboration and Aging: El Cajon, El Bombon, El Llano, El Sauco, Ábalos, San Francisco, La Rad, Tasugueras and La Tejera, with 100% Tempranillo from strains aged between 35 and 55 years old from La Canoca, La Liende, Guiasol, all located in the municipalities of San Vicente de la Sonsierra and Ábalos.
The fermentations take place in oak barrels and were started after a period of cold maceration, with the grape at a temperature close to 18 ° C, around 2-3 days. After the fermentations were started, they developed slowly with controlled temperatures of between 21 and 25ºC, and a duration of between 10 and 12 days.
With the maximum respect to the raw material and with a work oriented to the total respect to the land, it is also created
18 months in new French oak barrels.
